Make My Saturday Sweet - Blog Hop #27

Easy Marshmallow Recipe

This marshmallow recipe is so easy and safe that you can do it with your kids. I first learned about this recipe back in 1998 - 1999 when I used to sell Tupperware here in South Africa. I've included the American measurements for my American readers.

Marshmallow Recipe

Ingredients:

1/3 cup (80 ml) gelatin
1/2 cup (125 ml) cold water
1 2/3 cup (375 ml) boiling water
800 g (approx. 4 cups) caster sugar / super fine sugar
2 egg whites
2 ml (just under half a tsp.) cream of tartar / potassium hydrogen tartrate
5 ml (1 tsp.) vanilla essence

Method:

1. In a large bowl, soak gelatin in cold water. Then add boiling water and stir until dissolved.
2. Add the caster sugar (you can make your own by adding regular granulated sugar in a blender and pulsing for 10 sec.), egg whites, and cream of tartar. Beat with an electric mixer for 15 – 20 min. until the mixture thickens. Add the essence.
3. Pour the mixture into greased baking trays to set.
4. Cut into blocks when set and roll them in icing / powder sugar.
This recipe makes about 60 marshmallows.
