Father's Day and a Linky


We celebrated Father's Day last Sunday. Since we're still in lockdown in South Africa, we stayed home and spoiled a well deserving husband and father to our four kids. My hubby is always there for us. He's a rock that we can lean.

I made a fruit salad and crustless quiche for breakfast. For my quiche filling (the one cup of optional ingredients), I added an overflowing cup of cooked bacon and potato with finely chopped fresh green bell pepper.

For lunch (to have with our soup), Samantha baked artisanal bread. It's a no knead recipe and really easy to make! Amanda also got involved and baked chocolate chip cookies. We didn't have walnuts, so she skipped that step and chopped a slab of hazelnut chocolate instead. Check out the links to the recipes. They're really good!

Grandma's Love and a Linky

Welcome to my weekend blog hop -
Make My Saturday Sweet #220!


Samantha and I recently saw a program on TV about traditional German food. It inspired me to make a dish that I remember from my childhood. I grew up in the USA and in Germany. I had grandparents living in both countries at the time. The ones in Germany we called Oma and Opa.

One big way that my Oma shows her love is through her cooking. She has always made good food and just thinking about her cooking makes me salivate!

One German dish that came to mind was Goulash and Spätzle. We made it this past weekend. I made the Goulash and I asked Samantha to make the Spätzle. The last time I made it was so long ago that it felt like a first for the kids. I am including a photo below with some tips and links to recipes, if you're interested in giving it a try!

My Opa has subsequently passed away and my Oma has moved to the States. Both of her daughters are there. She first went to stay with my mom and step-dad and now she's staying with my aunt and cousin. My Oma is originally from Brazil, but she has German and American citizenship. She speaks four languages! The countries where she has lived are Brazil, Austria, Germany, the USA, and Mallorca, Spain and currently she is back in the USA. My mom, for example, was born in Brazil but grew up in the States.

The last time we saw my Oma was when we visited the States in 2013. Three of our kids met their great-grandmother for the first time! I shared some of these photos before and I hope you don't mind seeing them again.

Goulash with Spätzle


Everyone who tried it enjoyed the Goulash and Spätzle that Samantha and I made, pictured above. I didn't follow any recipe exactly. I tend to improvise and Samantha had to as well, since the Spätzle dough needed more milk than what the recipe stated. For that reason, I chose to include two recipe links below that look trustworthy. I also included a recent photo of Samantha.

The key to making Spätzle is to make sure that the dough doesn't get too runny (about 1 cup of milk to 3 cups of flour). The way Samantha made ours was by using a make-shift piping bag and piping worm shapes into a large pot of boiling water. Once the noodles float to the top, spoon them out with a slotted spoon. Scrape the bottom of the pot for any that might be sticking. They only need a few minutes to cook. Add a bit of butter to the bowl of cooked Spätzle to prevent them from sticking together. If Spätzle is a strange concept for you, then think "dumpling noodles." That's all they are really.

Easy Fresh Fruit Cobbler

My mother-in-law blessed us with a box full of fresh nectarines. We've been enjoying them in fruit salads. I also found a Peach Cobbler recipe on Food.Com and used our nectarines instead of peaches. We adapted it slightly and I have included our version below. We enjoyed it so much that we will make this for Thanksgiving.

EASY FRESH FRUIT COBBLER
adapted from Food.Com

INGREDIENTS

1/4 cup melted butter
1 cup flour
3/4 cup sugar
2 teaspoons baking powder
1/4 cup milk
5 - 6 nectarines / peaches, sliced
Cinnamon sugar for sprinkling

DIRECTIONS

1. Preheat oven to 350°F / 175°C.
2. Pour melted butter into an 8x8 pan.
3. Whisk together the flour,
3/4 cup of sugar,
baking powder and milk.
4. Pour over melted butter.
(Do not mix!)
5. Cover with sliced nectarines / peaches.
6. Sprinkle a generous amount of
cinnamon sugar on top.
Use less, if fruit is ripe.
7. Bake until batter rises to top
and forms a nice brown crust,
about 30 minutes.
Enjoy with custard or
ice-cream!

Yogurt-Curry Chicken and More with #Linky

I rarely post recipes, but this is my second one in a row on my weekend blog hop. My gift of three bookmarks by Donna at Writer Side Up inspired today's one. Her bookmarks encourage creativity, both in writing and in cooking. That makes them perfect for me, because I enjoy doing both!

When it comes to cooking, I usually don't follow a recipe, but I had extra yogurt and skinless chicken portions and needed an idea. I found this recipe, Yogurt-Curry Marinated Chicken, on Eating Well. You can click on their link to get the ingredients and preparation. I took photos of the steps that you can follow below. The only step that I adjusted was the red peppers. I didn't have any on hand, so I used my chilly paste instead. The yogurt tones down the heat of the curry. It's a healthy and flavorful dish. The best part is that it's super easy!

For a bit of humor, I thought to include a photo of my old oven gloves and my brand new ones. I was planning to replace my old pair, because they were no longer protecting my hands like they used to, but I was putting it off. Then recently I set them down absentmindedly on a stove that was off, but still hot, thereby scorching them and making it impossible for me to wait any longer.
